Al Baik Chicken Sandwich

Al Baik Chicken Sandwich is a popular fast-food item inspired by the famous Saudi restaurant chain Al Baik. It combines crispy broasted chicken with soft bread and signature sauces like garlic mayo or spicy sauce. The sandwich is known for its crunchy texture, juicy chicken, and bold seasoning that reflects the famous Al Baik flavor style.

This is a very detailed homemade copycat recipe for a large family serving about 8 to 10 people, designed to taste like the restaurant version.

Ingredients for chicken marinade include 2 kilograms boneless or bone-in chicken (preferably thighs or breast fillets cut for sandwiches), 1 cup plain yogurt, 1/2 cup milk, 2 tablespoons lemon juice, 2 tablespoons white vinegar, 2 tablespoons hot sauce, 2 tablespoons paprika, 2 teaspoons garlic powder, 2 teaspoons onion powder, 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon white pepper, 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon oregano, 1 teaspoon turmeric, and 1 teaspoon chili powder.

Ingredients for coating include 3 cups all-purpose flour, 1 cup cornflour, 2 teaspoons baking powder, 2 teaspoons salt, 2 teaspoons paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon black pepper, 1 teaspoon white pepper, 1 teaspoon chili powder, and 1 teaspoon dried herbs.

For sandwich assembly you will need soft burger buns or Arabic sandwich bread, lettuce, sliced tomatoes, pickles, and optional cheese slices.

For garlic sauce you will need 1 cup mayonnaise, 4 cloves garlic crushed, 2 tablespoons lemon juice, 1 tablespoon vinegar, 1/2 teaspoon salt, and 1 teaspoon sugar.

Start by preparing the marinade. In a large bowl mix yogurt, milk, lemon juice, vinegar, hot sauce, paprika, garlic powder, onion powder, salt, black pepper, white pepper, cumin, coriander, oregano, turmeric, and chili powder. Mix well until smooth and uniform.

Add the chicken pieces and coat them thoroughly. Cover and refrigerate for at least 8 hours, ideally overnight, so the chicken absorbs all the flavors and becomes tender.

When ready, remove chicken from the fridge and let it come to room temperature for about 20 minutes. This helps even cooking.

Prepare the coating by mixing flour, cornflour, baking powder, salt, paprika, garlic powder, onion powder, black pepper, white pepper, chili powder, and herbs in a large tray.

Take each marinated chicken piece and let excess drip off slightly. Coat it thoroughly in the flour mixture, pressing firmly so the coating sticks well. For extra crunch, you can dip it again in the marinade and recoat it.

Heat oil in a deep pan to medium temperature around 170–180°C. Fry chicken pieces in batches until golden brown and fully cooked inside. Each piece should be crispy outside and juicy inside. Drain on a wire rack.

To prepare garlic sauce, mix mayonnaise, crushed garlic, lemon juice, vinegar, salt, and sugar until creamy and smooth.

To assemble the sandwich, slice the crispy chicken fillet and place it inside a soft bun. Add lettuce, tomatoes, pickles, and drizzle garlic sauce generously. You can also add spicy sauce for extra heat. Press lightly and serve warm.

For best results, toast the bun slightly on a pan before assembling. This helps prevent sogginess and improves texture. The key to an authentic taste is the double coating and strong garlic sauce flavor, which gives the signature Al Baik style experience.

This recipe produces crispy, juicy, and flavorful Al Baik style chicken sandwiches with a crunchy coating, soft bread, and rich sauces that closely resemble the famous Saudi fast-food version.
